This Pizza-Stuffed Chicken recipe features tender and juicy chicken stuffed with mozzarella cheese, turkey pepperoni, and spinach. Only 228 calories per serving (3 points)
- 2 lbs. chicken breast, boneless, skinless
- 1/2 cup liquid egg whites (2 large eggs, gently beaten) use real eggs or liquid eggs
- 1/2 cup panko crumbs, whole wheat
- 1/2 cup Parmesan cheese
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 2 cups pizza sauce
- 1 cup baby spinach, thawed (if frozen)
- 1/4 cup fresh basil, chopped
- 16 slices turkey pepperoni (16 slices), chopped
- 1 cups mozzarella cheese, shredded, fat free
Preheat oven to 375° F. Take a large baking pan, line with foil and cover generously with cooking spray. Set aside.
Flatten each chicken breast. (Be careful not to do this directly on any counter.) To flatten, cover a chicken breast with plastic wrap or parchment paper. With a kitchen mallet, gently pound each chicken breast to about 1/3" in height. Set aside.
Lightly beat egg whites in a shallow bowl.
In a separate bowl, stir together panko-cheese and seasoning ingredients.
Take each chicken breast and lightly dip in the egg whites. Then, dip each chicken breast on one side in the panko-cheese-seasoning mixture.
With the chicken breasts still in the pan, take a tablespoon or two of the pizza sauce and top chicken breast. Then, layer with spinach, basil, turkey pepperoni, and cheese. Repeat for each breast.
Once filled, roll/fold each chicken breast over, so that the pizza stuffing is inside breasts. Place each breast on cooking sheet.
Place in oven and bake for 45 minutes at 350° F. Ideally, place meat thermometer inside breasts to ensure the temperature is between 160-165 degrees F.
Remove from oven and let the chicken sit for 10 minutes before serving.
